We were curious on how the Parmigiano Reggiano flavor profile of a 14 month Parmesan would change based on some of our favorite spirits. We chose a sparkling Italian Cuvée, a mild rye and an IPA beer for the pairing. The flavor profile of a 14 month Parmesan has a hint of sweet and acid with citrus, banana and pineapple on the nose. Let\’s see what subtle changes happen with each pairing!

The Cuvée has enough acidity to compliment the fattiness of this amazing Parmesan and the slight sweetness compliments the saltiness. This was my favorite pairing as the two are a pleasant marriage of flavors.

The mouth feel of the Parmesan along with both the hops and aroma add an explosion of delightful flavors to the palate. This is a very pleasant pairing for hop enthusiasts.
We found rye to stand handsomely alongside this fairly young Parmigiano Reggiano.
