Red Ash Italia Serving Wood-Fired Cuisine

Red Ash Italia recently opened in downtown and is serving elevated wood-fired cuisine. Chef Carver\’s menu consists of delectable seafood dishes, fresh handmade pastas, locally sourced prime meats and fresh seasonal vegetables. The swoon worthy housemade desserts beautifully punctuate the culinary experience. The menu inspiration comes both Southern and Northern Italy and are prepared in the wood-burning grill and plancha at the heart of the restaurant. The extensive wine menu is a blend of Old and New World wines. Anne Ducote\’s touch can be found in the restaurant as well as gorgeous photos that Chef Carver\’s fiancee took which tell the tale of their adventures in Italy. 
Here are some highlight of our recent dining experience:
Ventian Spritz at Red Ash Italia

Venetian Spritz, is a true classic with Aperol, soda and Benvolio Prosecco. I appreciated the light flavor which made this gorgeous cocktail pair beautifully with the cuisine. 
Charred Slice Tuna Crudo at Red Ash Italia
We started off our culinary experience with the thin sliced Beef Carpaccio and a delightful Charred Sliced Tuna Crudo. The carpaccio is topped with a refreshing horseradish crema, ciabatta crisps, grama and pickled red onions. The tuna crudo is in a wonderful chilled shellfish broth, sardinian fregola ad olive salmoriglio. 
Roasted Beets Salad at Red Ash Italia
The Roasted Beets Salad is the perfect accompaniment to any meal. The salad is the perfect blend of fresh greens, roasted orange, fennel, red onion, rucola, creamy feta with an invigorating citrus vinaigrette.
Wood Grilled Cold Water Lobster Tails at Red Ashi

The Wood Grilled Cold Water Lobster Tails are out of this world! These delicacies are served “scampi style” with zesty lemon, garlic, 0reganata crumbs  and campari tomatoes.
Housemade Pasta Dish at Red Ash Italia

The handmade pastas at Red Ash are an absolute must try! I indulged in a special of the day, an incredible Piedmont style pasta dish with Grana Padano, veal & braised pork and truffles. 
Affogato at Red Ash Italia

I was blown away by the affogato with housemade chocolate chip gelato plated with a housemade chocolate chip biscotti. 
Each dish was thoughtfully prepared, beautifully presented and left us wishing we had room for more.
