Full Disclosure: I recently attended a complimentary tasting at Bandwagon TX. All opinions are my own.


Back in February the team behind Bandwagon TX Food Trailer invited friends, family and food writers to preview their fusion of Latin and Asian cuisine. They beautifully blend a variety of Latin and Asian influences creating dishes that are both tantalizing and creative. It was such a pleasure meeting manager/chef Ryan Saldarriaga and owner Mario Carranza as they shared the details on their exciting new venture. The Bandwagon Food Trailer is opening on May 8th, 2015 at the Good Life Food Park right next to La BBQ.

Salmon Ceviche With Guacamole on a Wonton Tostada

The tasting started off with a zesty salmon ceviche topped with creamy guacamole, diced cucumbers, garnished with cilantro on top a wonton tostada. The salmon is incredibly tender and the avocado balanced the citrus from the ceviche harmoniously. I love this menu item and wouldn\’t fathom visiting the trailer without indulging in this perfected ceviche.

Patacones con Hogoa

Patacones con hogoa is a Columbian specialty. The dish is simple yet delicious and is often served as a snack or appetizer. The Bandwagon TX version has fried plantains topped with a warm tomato chutney.

Spicy Sweet Corn Elote
The spicy sweet corn elote was such a treat! It is grilled sweet corn rolled in a spicy mayo, queso fresco and drizzled with a tangy Thai chili sauce. Finish off your meal with this sweet and spicy dish and there will be no need for dessert!
Empanadas and Grilled Corn

My favorite of their dishes is the incredible empanadas. These savory empanadas have chicken teriyaki and broccoli enveloped in a light flaky crust. The chicken is super tender and the teriyaki flavor compliments the dish nicely.

NOTE: We tasted the following four dishes below but they are not on the Bandwagon TX menu at this time.

Tempura Anticuchos
Anticuchos is a Peruvian of stewed meat. Their take on anticuchos is tempura-fried served with pickled ginger and wasabi huancaina. 
Korean Cuban Sandwich with Pork Belly and Pork Shoulder

If you love all things pork than you will love their Korean Cuban sandwich! This decadent sandwich has richly flavored pork belly, succulent pork shoulder with mustard seed and diced cucumbers.

Mexican Carnita Banh Mi
I enjoy their take on a banh mi. Their savory version called a Mexican carnita banh mi has tender pulled pork, pickled onions, sprinkled with queso fresco with a delectable sauce.
Shrimp Avocado Bowl

The shrimp avocado bowl encompasses ingredients I love. The creamy avocado half is filled to the brim with Malaysian chili sauce and topped with perfectly cooked shrimp.
